Cricket Potein Pancakes

Ingredients:

  • 1 cup all-purpose flour

  • 1/4 cup cricket powder

  • 2 tablespoons sugar

  • 2 teaspoons baking powder

  • 1/2 teaspoon baking soda

  • 1/4 teaspoon salt

  • 1 cup milk

  • 1 egg

  • 2 tablespoons melted butter

    Instructions:

    1. In a large bowl, whisk together flour, cricket powder, sugar, baking powder, baking soda, and salt.

    2. In a separate bowl, whisk together milk, egg, and melted butter.

    3. Pour wet ingredients into dry ingredients and stir until just combined.

    4. Heat a non-stick skillet over medium heat.  

    5. Pour 1/4 cup of batter onto the skillet and cook for 2-3 minutes, or until bubbles form on the surface.

    6. Flip and cook for 1-2 more minutes, or until golden brown.

    7. Serve with your favorite toppings.

Cricket Veggie Scramble

Ingredients:

  • 1/4 cup chopped onion

  • 1/2 cup chopped bell pepper

  • 1/4 cup chopped mushrooms

  • 1/4 cup chopped spinach

  • 2 eggs

  • 1/4 cup unsweetened plant-based milk

  • 1/4 cup vegan cheese (shredded)

  • 2 tablespoons cricket powder

  • Salt and pepper to taste

    Instructions:

    1. Heat olive oil in a skillet over medium heat.

    2. Sauté onion, bell pepper, and mushrooms until softened.

    3. Add spinach and cook until wilted.

    4. In a bowl, whisk together eggs, milk, vegan cheese, cricket powder, salt, and pepper.
