Chocolate Cricket Cookies
Ingredients:
1 cup unsalted butter, softened
1 cup granulated sugar
1/2 cup packed brown sugar
2 large eggs
2 teaspoons vanilla extract
2 1/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/4 cup cricket powder
1 cup semi-sweet chocolate chips
Instructions:
Preheat oven: Preheat your oven to 375°F (190°C).
Cream butter and sugars: In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
Add eggs and vanilla: Beat in the eggs one at a time, then stir in the vanilla extract.
Combine dry ingredients: In a separate bowl, whisk together the flour, baking soda, salt, and cricket powder.
Combine wet and dry ingredients: Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Fold in chocolate chips: Gently fold in the chocolate chips.
Bake: Drop rounded tablespoons of dough onto ungreased baking sheets. Bake for 10-12 minutes, or until golden brown.
Cool and serve: Let cool on baking sheets for a few minutes before transferring to a wire rack to cool completely.

Cricket Powder Brownies
Ingredients:
1 cup all-purpose flour
1/4 cup cricket powder
1/2 cup unsweetened cocoa powder
1 teaspoon baking powder
1/4 teaspoon salt
1 cup granulated sugar
1/2 cup packed brown sugar
1/2 cup (1 stick) unsalted butter, melted
2 large eggs
1 teaspoon vanilla extract
Instructions:
Preheat oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
In a large bowl, whisk together flour, cricket powder, cocoa powder, baking powder, and salt.
In a separate bowl, whisk together granulated sugar, brown sugar, melted butter, eggs, and vanilla.
Combine wet and dry ingredients until just combined.
Pour batter into prepared pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
Let cool completely before cutting into squares.
No Bake Cricket Powder Energy Bites
Ingredients:
1 cup pitted medjool dates
1/4 cup creamy peanut butter (or sunflower seed butter for nut-free)
1/4 cup unsweetened cocoa powder
1/4 cup rolled oats
2 tablespoons cricket powder
1 tablespoon chia seeds
1 teaspoon vanilla extract
Instructions:
Prep the dates: Place the pitted medjool dates in a food processor and pulse until they form a sticky paste.
Combine ingredients: Add the peanut butter, cocoa powder, oats, cricket powder, chia seeds, and vanilla extract to the food processor. Pulse until the mixture starts to stick together.
Form balls: Roll the mixture into bite-sized balls.
Chill: Place the energy bites in the refrigerator for at least 30 minutes to firm up.
Optional:
For a sweeter treat, add a drizzle of honey or maple syrup to the date mixture.
Roll the energy bites in coconut flakes for added texture.
